Zucchini : 2 medium zucchini (coarsely grated)
Onion : 1/2 (chopped)
Egg : 1 (beaten)
Wholemeal Flour : 75g
Salt & Pepper : As per taste
Greek Yoghurt : 100g (Topping)
Spring Onion : 1 sliced bunch (Topping)
Combine main ingredients in a bowl & mix it well
Put a frypan on medium heat & lightly spray with oil
Drop a spoonful of mixture onto frypan & press down to form the shape of pancake
Cook on both sides until the mixture turns brown & cooked through
Plate up & serve with greek yoghurt & sliced spring onion.
