Weetbix Breakfast Bliss Balls

Ingredients

Almonds : 100 gm

Weetbix : 4 pieces

1 Banana : 1 large (chopped)

Fresh Medjool Dates: 200 gm

Vanilla extract : 1 tsp

Desiccated Coconut: 5 tbsp

Method

Step 1

Process the almonds in a food processor until finely chopped.

Step 2

Add Weetbix, bananas, date, vanilla and tbsp of coconut

Step 3

Process until combined.

Step 4

Roll heaped tbsp of the mixture into balls.

Step 5

Spread remaining coconut on a plate and roll balls lightly in coconut to coat.

Step 6

Store in airtight container in the fridge for up to days.

Step 7

Note: Makes balls of the batter.
