Rice - 50 grams

Paneer - 50 grams

Ghee - 10 grams

Cauliflower - 110 grams

Carrot - 40 grams

Green Peas - 35 grams

Onion - 70 grams

Cabbage - 25 grams

Green Beans - 50 grams

Non-fat Greek yogurt - 170 grams

Whole spices ( Green Cardamom - 2, Cinnamon - 1 inch, Bayleaf - 1, Star Anise - 1)

Regular spices - Turmeric, Coriander Powder, Cumin Powder, Cumin Seeds, Red Chili Powder, Garam Masala

Chaat Masala - 1 tsp

Salt - To Taste

Asafetida - 1/4 tsp

Water - Twice the amount of rice by volume

Method

Step 1

Take a wide bottom pan. Heat for mins on medium low and add ghee . Once ghee is hot, add whole spices and cumin seeds. Wait for seconds . Add sliced onions, sauté till translucent ( mins) . Add green beans, carrots, cauliflower, green peas and cabbage. Sauté for mins. Add salt and regular spices. . Add soaked rice, sauté for a min and add water. Add boiling water to speed up cooking time . Once the mixture is boiling, wait for min and add paneer. . Simmer the flame and let it cook till all water evaporates. Can take - mins. Depends on the type of rice. You can adjust the quantity of water depending on the type of rice. . Whisk Greek yogurt, add water to adjust consistency and add Chaat Masala. Tip - Keep Veggies chopped for few days or you can use frozen veggies. Depending on taste you can add any other vegetable like spinach, bell peppers, Brocolli etc.
