Cut Veggies into medium sized pieces. To a bowl, add curd, ginger garlic paste, salt, turmeric & chili powder. Mix up well. Add veggies to the marinade & and refrigerate for mins. Rinse basmati rice and soak for mins.
Heat ghee or oil in a pot. Saute whole spices – cardamoms, cloves, cinnamon, star anise, nutmeg. Fry onions evenly stirring often until light brown. Add tomatoes ,marinated veggies,& saute on a medium flame for minutes. Cover with a lid and let it cook for mins on low flame. Layer evenly at the bottom. In the meantime, boil water with salt, green chillies, cardamoms, cinnamon. Add the soaked Basmati rice and let the rice cook uptill %. Strain the boiled rice from water. Spread rice in a layer over the veggies. Level the rice if needed. Sprinkle mint & fried onions if using. Cook the biryani on dum for min on low flame. After that let it sit for min before opening the lid. Cut paneer into small cubes and saute them on a non stick pan until golden brown. Add it to the Biryani coz Protein is bae 😉
