Roasted Cumin Seeds Powder

Ginger paste
Lemon juice - 1 tbsp

Tomato - 50gm
Onion - 50gm
Add oil, cumin seeds, asafoetida, bay leaf, cinnamon stick and the ginger paste into a cooking vessel and saute it till the raw ginger smell turns aromatic. Add chopped onions next and saute till they turn translucent.
Then add the veggies and chopped tomatoes with some salt. Add a little amount of water. Cover and cook till the veggies are well cooked.
Add in the seasoning ingredients. Red chilli powder, roasted cumin seeds powder and turmeric powder. Mix all of this well.
Add the soaked and cooked Channa along with cooked rice into the spiced veggies in the vessel. Add lemon juice and mix everything gently.
Also add in some coriander and mint leaves for added taste.
