1. Thai ingredients like lemongrass, kefir lime, shallots, ginger, galangal root
Soy tofu 100 gm
Mushroom, eggplant used as veggies
Coconut oil 5 gm
Lemon to taste
Vegan Fish sauce 10 gm
Brown sugar 5 gm
Coconut milk 50 gm
Saute shallot in a little oil over medium heat.
Add a paste of ginger, lemongrass, lime leaves, Thai basil and galalagal
Add tofu
Stir in the coconut milk, fish sauce, chilies, and salt and bring to a gentle simmer.
Squeeze lime and serve hot with or without Rice
