. Soak g (or as per your requirement) soy chunks in hot water for at least - min, then drain the water. Shred the chunks using hand or pulse them in a mixer (this is the best option) . Add .tsp oil to a pan (approx g) . Once the oil is hot, fry the spices. This is optional. Spices - small bay leaf, cardamom, medium stick of cinnamon. . Tempering : Add tsp of Cumin seeds, / tsp of mustard seeds and - green chillies. Optional : /tsp urad dal and /th onion. . Once the tempering is fried enough add / tsp turmeric . Add shredded soy chunks and fry for a min . Add tsp salt, tsp red chilli powder and tsp coriander powder . Fry for a min or two . Add cooked rice (-g as desired) . Add handful of chopped coriander and fry this for min. Switch off the flame. . Best served with a tomato rasam on the side. Note: you can add green beans or carrots or any other veggies as you wish
