Brinjals - small - 100 g
Soya chunks -raw -15 g
Dry roasted coconut-5 g
Peanuts roasted-5 g
Sesame - roasted -2 g ( optional)
Goda masala-1 tsp
Kanda lasun masala -half tsp
Red chilli powder -half tsp
Ginger garlic paste-1 tsp
Fresh garlic pods -2/3
Ghee/0il -5 g
Onion-50 g
Tomato-50 g
Fresh coriander leaves for garnish
Tamarind pulp / lemon juice - half tsp ( as per taste)
Jaggery / stevia- 3 g
Salt
Turmeric powder
Dhania jeera powder
Cummin,mustard,asafodita for tadka
* clean brinjal and slit in the centre. keep in water for sometime
Stuffing- In a mixie jar add raw soya chunks, roasted dry coconut, roasted peanuts,roasted sesame seeds and grind
To this dry mixture ,add ginger garlic paste, salt , turmeric powder , goda masala,kanda lasun masala,red chilli powder,dhania jeera powder, tamarind pulp, jaggery/ stevia Mix properly
Stuff this masala in brinjals, keep aside
In a nonstick pan , heat oil Add tadka of mustard seeds, cumin seeds and asafotida Add onions, when they soften add tomatoes , sauté till mushy
Add stuffed brinjals , add some water , cook them on slow flame covered with lid
Garnish with fresh corriander leaves,and enjoyyyy with chapati or Bhakri
