1 medium onion and capsicum, coriander and lemon, green chillies and curry leaves
- Chop onion, capsicum, green chillies and handful of cilantro
Take a non stick pan. Add olive oil ( any oil of your choice), add some mustard seeds, little cumin, asafoetida, curry leaves, slit green chillies. Add onion and capsicum and sautรฉ for few minutes. At this point add salt so that veggies release some moisture and cook in it. Put the lid on and let it cook for - minutes
Meanwhile soak the soya granuels in warm water ( I put it in microwave for mins). Also soak the poha
Now add some turmeric and along with it add the soaked soya granuels. Stir well . At this point add salt if required. Cover and keep for a minute or two. Now add the soaked poha along with cilantro. Squeeze lemon for taste and enjoy this delicious breakfast ๐
P.S- You can also add some peanuts if it fits in your macro. Also can skip capsicum if you do not like the taste of it in poha or can add any other veggie of your choice. If onion tends to burn due to less oil you can sprinkle some water to let it be moist ( I did that or else the poha becomes really dry)
