Red Pumpkin/Bhopla - 500 grams
Onion- 50 grams
Mustard seeds - 1tsp
Urad daal- 1tsp
Curry leaves
Oil - 5 grams
Hing
Grated Coconut
Chilli powder or chopped green chillies
Salt
Remove the skin and cut the Red Pumpkin into small cubes.
Heat oil in a kadai.
Add mustard seeds and let it splatter, add urad dal and let it brown.
Add curry leaves and hing, fry for few seconds.
Add the onions, saute for till the rawness goes away.
At this point you can add green chillies or chilli powder, saute.
Add red pumpkin, little water and salt. Mix well.
Cover and cook till Pumpkin is soft.
Garnish with fresh grated Coconut.
