Rice, boiled- 140 gms
Whole egg- 2
Olive oil- 10 gms
Onion- 50 gms
Green chillies- According to taste
Salt- to taste
Dry red chilli- 1
Pepper powder- 0.5 tspn/to taste
Monosodium glutamate- Optional
You can use leftover rice for this recipe but it shouldn't be mushy or overcooked.
Heat the oil in a wok/kadai. Add the dry red chilli. Then add the sliced onion and green chillies.
Saute the onions till they turn golden. Add a little salt to fasten the process.
Meanwhile whisk the eggs. Once the onions have turned golden, add the eggs and stir in a scrambling motion. Add salt and pepper.
Keep scrambling the eggs till they reach a bhurji type consistency. Do not overcook.
Add the cooked rice and MSG. Mix well. Cook for about a minute & take it off the flame
MSG lends the fried rice an exotic flavour, you can skip it if you want.
