Ingredients

For the Protein Dressing • Paneer – 50g • 1 Khimia date, seed removed • Fresh coriander leaves – 10-15g • Garlic cloves – 2 • Roasted jeera powder – ½ tsp • Black salt – to taste • Water as required For the Salad • Chopped cucumber, lettuce, red bell pepper, and yellow bell pepper – 150g total For the Crunch • Rice paper sheets – 1

Method

Step 1

• Add paneer, date, coriander leaves, garlic, roasted jeera powder, black salt, and a little water to a blender. • Blend until smooth, creamy, and pourable. • Add the chopped vegetables to a large bowl. • Pour the dressing over the vegetables and toss well until evenly coated. • Microwave the rice paper sheets for approximately minute until they puff up and become crisp. • Break them into rustic crackles. • Serve the crackles alongside the salad or crush them over the top just before eating.
