Ingredients

New potatoes: 225 gm

Cucumber: 50 gm

Red bell pepper: 75 gm

Garlic cloves: 1 piece

Buttermilk: 110 gm

Sour cream: 15 gm

Red onion,coarsely chopped: 4 gm

Salt: 1-2 pinches

Pepper: 1 pinch

Fresh parsley, chopped: 2 tspn

Method

Step 1

Bring a large pot of water to a boil. Scrub the potatoes, cut them into -inch cubes and boil them for about minutes or until tender.

Step 2

Meanwhile, peel the cucumber and cut it into large dice.

Step 3

Seed the bell pepper and cut it into -inch squares.

Step 4

Bring water in a medium-sized saucepan to a boil.

Step 5

Blanch the cucumber for minute, remove with a spoon and cool under cold water.

Step 6

Blanch the garlic for minutes, drain and set aside.

Step 7

Drain the potatoes and set them aside to cool slightly.

Step 8

For the dressing, in a food processor or blender combine the garlic with / cup each of potatoes and buttermilk. Process until pureed. Then stir in the sour cream and remaining buttermilk.

Step 9

In a large bowl combine the remaining potatoes, cucumbers, bell pepper and onion.

Step 10

Add the dressing, salt and pepper; and toss gently to combine.

Step 11

Sprinkle the salad with parsley and serve.
