Ingredients

Zucchini : cut into spirals 200g

Light high protein Mozzarella :125g

Bell peppers : 100g

Garlic : 1 clove

Butter unsalted : 11g

Mushrooms raw : 100g

Method

Step 1

Chop bell peppers, mushrooms, zucchini spirals and garlic

Step 2

Heat butter in a wide pan, brown the garlic

Step 3

Add mushrooms, cook for - min, then add bell peppers and cook for another min Now add the spirals of zucchini and cook for min

Step 4

Drain water from the mozzarella, shread or break into pieces to add to the pan.

Step 5

season with your favourite, I used fresh black pepper, salt and basil
