broccolli - equal weight as capsicum
onion - one medium
tomato - one medium

Cut Paneer into small rectangular cubes or slices(not very thin). add salt and pepper and mix well. Take a non stick pan/tawa. No need to add oil, just put all the seasoned paneer pieces on medium heat. ensure that they are lying flat on the tawa. once one side is done, flip the pieces. you can stop when they are golden, or roast them till brown. once done, keep the paneer aside. the tawa will have a bit of the fat left from the sauteed paneer. add thin long slices of onion on to it. add salt, pepper to season lightly. roast them to slightly cook them but leave them crunchy. should take only - seconds. once done, keep them aside with the paneer.
now add small pieces of capsicum and broccolli directly on the tawa again. ensure flame is on low for this step. stir and roast them for a minute with light seasoning.
Next, add one tomato in small pieces to this, stir a few times, add - ml of water so they don't stick to the pan, cover and cook on low flame for - minutes. the raw taste of these veggies will go. but they will be sufficiently crunchy.
uncover. bring to medium flame. Add shahi paneer masala to this and stir for seconds before adding the paneer and onion to this and mixing it well. OR add oregano, pizza seasoning instead of Shahi Paneer masala. OR use salt, and pepper and cayenne pepper to season. But do try with shahi paneer masala. tastes like the curry without having to use oil and actual gravy.
