spinach 150gm whole wheat atta 30gm spices - salt, chilli powder
Blanch/Cook gms spinach. Drain water. Mix in gm whole wheat or any other flour. Add spices as per your diet/macros. I usually stick to salt, turmeric and chilli powder. Mash everything together with a spatula till it looks like a paste.
Divide into equal portions with the spatula. I usually get from these portions. Roll into desired shape by placing batter between two parchment sheets. Keep in mind that the batter will be sticky so avoid touching with hand.
Gently peel the top parchment paper and tip the roti on a heated pan/tawa with the bottom side parchment paper now facing top. Once the roti starts cooking, gently nudge the parchment and it'll come loose. Cook both sides of the roti till golden brown. Can add oil/butter/ghee if that is allowed in your diet.
Beat enjoyed with some protein as a side dish.
