Broccoli 100g ground to coarse powder in a grinder or food processor
Cauliflower 100g ground to coarse powder in a grinder or food processor
Chicken breast 150g cut into small pieces
Onion 50g
Piri piri seasoning, salt, pepper, garlic powder to taste
Olive oil 10g
Add half the oil to heated pan
Fry the chicken pieces with salt and remove once done
Shallow fry onion in rest of the oil. Add the cauliflower and broccoli ‘rice’
Add salt and cover till the veggies are almost cooked
Add the fried chicken
Sprinkle garlic powder, piri piri seasoning, salt and pepper
Garnish with coriander leaves
