Basmati rice soaked for 15 minutes and drained 1 1/2 cups Garlic finely chopped 2 tablespoons Spinach leaves (palak) shredded 2 cups Ghee 2 tablespoons Black peppercorns 5-6 Cinnamon 1/2 inch stick Cloves 3-4 Green cardamoms 2 Salt to taste Fried garlic for garnish Fried spinach for garnish Boondi raita to serve
Heat ghee in a deep non-stick pan, add black peppercorns, cinnamon, cloves, green cardamoms and garlic, mix well and sauté till it turns golden brown. Add rice and mix well. Add salt and ½ cups water and mix well. Cover and cook till rice is almost cooked. Add spinach and mix with a light hand. . Cook for - minutes and take it off the heat. Transfer the rice into a serving bowl, garnish with fried garlic and fried spinach and serve hot with boondi raita
