120 gms dried chickpeas
3 tbps white sesame seeds
3-4 garlic cloves
1-2 tbps lemon juice
1/4 cup extra virgin olive oil
1 tbps cumin powder
Salt as per taste
Rinse the chickpeas and soak overnight
Next day, drain all the water and transfer it to a pressure cooker. Add some salt and pressure cook for around min on medium flame
Take a small heavy bottomed pan and place on stove on low heat
Add the sesame seed to it and rost it. Make sure to keep stirring it or seeds will turn brown
Once sesame seeds are cooled down, add them to a food processor and make a fine powder out of them
Now add garlic, lemon juice, lemon zest, oil, cumin powder and salt. Blend them to a semi fine consistency
Finally add your chickpeas and bend till you get a smooth and fluffy texture
