Ingredients For the protein base * 1 cup soya chunks * ¾ cup chana dal (soaked for 6–8 hours) * 1 medium bottle gourd (lauki), chopped * 1 large onion, roughly chopped * 5–6 garlic cloves * 1 cinnamon stick * 2 bay leaves * 1 black cardamom (badi elaichi) * Water (just enough for pressure cooking)
Step : Pressure cook Add to a pressure cooker: * Soya chunks * Soaked chana dal * Chopped lauki * Onion * Garlic * Cinnamon * Bay leaves * Black cardamom * Just enough water to cook everything. Pressure cook for – whistles and allow the pressure to release naturally. ⸻ Step : Blend Remove: * Cinnamon stick * Bay leaves * Black cardamom Using a hand blender, blend everything else into a smooth thick paste. ⸻ Step : Cool Allow the mixture to cool completely until it reaches room temperature. This step is important because hot mixtures make sticky dough. ⸻ Step : Prepare the dough Into the cooled mixture add: * Whole wheat flour * Garam masala * Roasted cumin powder * Amchur * Salt * Red chilli powder * Chopped green chilli * Chopped coriander Mix everything together and knead into a medium-soft dough. No extra water should be needed because the lauki provides plenty of moisture. ⸻ Step : Roll * Divide into equal portions. * Roll like regular parathas using dry atta if needed. ⸻ Step : Cook Cook on a hot tawa. Apply a little desi ghee (or oil) on both sides until golden brown. Serve hot with: * Curd * Greek yogurt * Pickle (optional)
