Ingredients

High protein paneer - 200gms

pasta of your choice - 100gms

brocolli -100gms

button mushrooms - 100gms

corn - 100gms

garlic

dried red chilli

italian herbs

Method

Step 1

Bring salted water to a boil. Add the pasta and cook until al dente. Reserve a little pasta water. Drain the pasta.

Step 2

Add to a blender: g low-fat paneer garlic cloves dried red chilli Salt Blend until completely smooth and creamy.

Step 3

Heat the sauce Pour the blended paneer mixture into a pan. Cook over low to medium heat, stirring continuously. If it becomes too thick, add a splash of the reserved pasta water.

Step 4

Add the pasta Add the cooked pasta mushrooms and broccoli to the pan. Toss until every piece is coated with the creamy sauce.

Step 5

Mix until the cheese melts into the sauce. Sprinkle black pepper and chilli flakes if desired. Serve hot.
