Cut eggplant into thin slices, add salt & pepper powder & shallow fry in oil. Take curd in a bowl add salt & pepper powder & mix till all lumps become smooth. Add the fried brinjal In a pan add oil (as per macros ), add mustard seeds, chopped garlic ,dry red chiili and curry leaves. Keep stirring slowly on low heat for to minutes.
