Eggplant - 200 gm

Curd - 200 gm

Garlic

Dry red chilli

Curry Leaves

Mustard seeds

Oil - 7 gm

Salt & Pepper Powder

Method

Step 1

Cut eggplant into thin slices, add salt & pepper powder & shallow fry in oil. Take curd in a bowl add salt & pepper powder & mix till all lumps become smooth. Add the fried brinjal In a pan add oil (as per macros ), add mustard seeds, chopped garlic ,dry red chiili and curry leaves. Keep stirring slowly on low heat for to minutes. Add this tempering to brinjal in curd. Healthy delicious combination of egg plant and curd is ready #quantifiednutrition #nutrition
