Ingredients

2 eggs

150ml milk

50ml fresh cream

2tbsp erythritol (any sweetner of ur choice)

1/4 tsp cinnamon pwd

a pinch of nutmeg pwd

Method

Step 1

Separate the eggs whites n yolks in different bowls.

Step 2

In a saucepan heat the milk, cream, nutmeg, cinnamon and tbsp sweetner together untill warm.

Step 3

Whisk the egg yolks n tbsp of sweetner together untill smooth n frothy. (Colour changes from dark yellow to pale yellow. )

Step 4

Temper some of the warm milk mixture little by little into the egg yolk mixture. Stirring the entire time. (do not add the warm milk all together to the yolks, it will curdle the yolks.)

Step 5

Add the mixture back to the sauce pan and bring to a near boil, stirring constantly. Turn off the heat n let it cool.

Step 6

Whip the egg whites with a pinch of salt, untill ribbony (just before you reach soft peaks. )

Step 7

Add the egg whites into the yolk n milk mixture and stir well.

Step 8

Keep some egg white for topping. Decorat with a cinnamon stick, star anise n a sprinkle of cinnamon.

Step 9

Can be had warm or chilled. I personally njoy it chilled ❄

Step 10

Keep refrigerated, stir before serving.

Step 11

With the listed ingredients I made cups... u can adjust the ingredients according to your macros. Half them or double them as per your preference... I have used erythritol as sweetner which doesn't have calories... if you're using sugar or honey or another sweetner plz add the calories accordingly.
