Dice the cucumber into bite sized pieces, slices the cherry tomatoes into halves, chop coriander leaves and them all into a bowl.
To make the dressing, squeeze half a lemon, add a pinch of salt and pepper, give it a whisk.
Pour the dressing on to the bowl and mix them well.
