Serves: 2 π± Ingredients: β’ 50g soya chunks β’ 1 tsp (5g) ghee β’ 200g chopped onions β’ 1 small cinnamon stick β’ 3 green cardamoms β’ 2 bay leaves β’ 5 cashews β’ 1 tbsp kasuri methi β’ 150ml milk β’ Salt to taste
Soak soya chunks in hot salted water until soft. Drain & lightly squeeze excess water. Heat ghee in a kadai. Add cinnamon, cardamom & bay leaves. Add onions and sautΓ© till golden/translucent. Cool the mixture. Remove bay leaves, peel cardamoms & keep the seeds. Grind the onion mix with cashews, cardamom seeds, kasuri methi & ml milk into a smooth creamy paste. Add the paste back to the kadai. Pour remaining milk and add soya chunks. Add salt to taste and simmer on low flame for minutes. β¨ Done! A creamy βmalai-styleβ gravy without actual malai π€
