200 g mixed vegetables — baby corn, orange carrots, potatoes & French beans 250 ml milk 1½ tsp whole-wheat flour (atta) 2 tsp butter/ghee, divided 6–8 cloves garlic, finely chopped Salt, as per taste Mixed herbs Chilli flakes
Chop the baby corn, carrots, potatoes and French beans into long, finger-sized pieces. Add all the vegetables to a pressure cooker with a good amount of water and salt. Pressure cook for just whistle. Immediately release the pressure, open the cooker and drain all the water. Heat tsp butter/ghee in a pan. Add the boiled vegetables and mixed herbs. Sauté for a couple of minutes and keep aside. In another kadhai, heat the remaining tsp butter/ghee. Add chopped garlic and sauté until beautifully fragrant. Add ½ tsp atta and sauté well until the raw smell disappears and the flour becomes aromatic. Slowly add ml milk while continuously whisking to prevent lumps. Let the sauce come to a boil and thicken slightly. Add salt, mixed herbs and chilli flakes. Add the sautéed vegetables, mix everything well and let it simmer for minutes. Serve hot and creamy! 🤍🥕🌽
