Cauliflower shredded - 200gms
Chopped veggies - 200 gms
Soya chunks - 30gms
olive oil - 10gms
garlic - 2 cloves
Spices - Asafetida, cumin, chilli powder, turmeric powder, black pepper powder, coriander powder, salt
eggplant - 100gms
Coriander leaves
ketchup - 1 spoon
Add oil to non stick pan. Add asafetida, cumin , turmeric.
Add minced garlic to it.
Add veggies and rest of the spices on top of it. saute for a minute.
Add ketchup and mix.
Add shredded cauliflower. Mix well. Garnish with coriander.
You could air fry soya chunks or add while adding veggies and saute.
Also while making rice your could Tava roast eggplant with few drops of olive oil and spices of your choice.
You can also add paneer cubes as per your macros.
