3 cup diced carrot
1 1/2 tbps minced ginger
1 Onion finely chopped
1 tbps butter
1/2 cup milk
2 1/2 cup vegetable stock
salt and pepper to taste
Add Butter to a deep saucepan and once melted, add ginger, onion and saute till onion becomes translucent
Then add carrot, salt, pepper and vegetable stock and stir it
Simmer it until the carrots are very tender
Once tender, using immersion blender puree carrots until smooth then stir in the milk, and simmer for minutes and carrot and ginger soup is ready to serve.
