1 cup cauliflower rice, cooked (can sub any rice) 1 cup beet root, shredded 1/2 cup carrots, grated 1/2 cup mushrooms, cut into halves 1/2 cup lettuce/cabbage, shredded 4 beans sticks, steamed 1 cup mix lentils, boiled 1 avocado, make a paste sesame seeds to top
Make the sauce: Add all the avocado sauce ingredients (cut avocado+ garlic+ginger+ salt+ peri peri) to a small blender or food processor and puree until combined. Taste and adjust seasoning to taste if needed. Assemble the bowls: To assemble the bowls, place some leafy vegetables at the bottom of your bowl, then top with various topping ingredients. Drizzle the spicy avocado sauce on top and enjoy!
