1 Medium sized Avocado
1/4 tsp black pepper
Salt to taste
1 tbsp spring onion
15 ml olive oil
Blend avocado to form avocado puree.
Mix spring onion, black pepper and salt to taste with the avocado puree.
Apply to tbsp avocado mixture for each sandwich.
Toast it with olive oil and serve with coriander or coriander-mint dip.
