Ridge gourd peel (optional pieces) 250gm
Onion 50 gms
Jaggery 2 gms
Sesame Seeds 5 gms (optional but adds a lot of flavour)
Peanuts 10 gms (optional but adds a lot of flavour)
Garlic 2 big cloves
10 Curry leaves
Tamarind concentration/ tamarind as per taste
Salt as per taste
Ghee 5 gms
1 gm Urad dal, Mustard seeds, hing for tempering
To make Versatile Ridge Gourd Peel Chutney on low to medium heat keep kadai and - Add . gms of Oil/Ghee and heat - Add Peanuts roast for couple of mins - Add cumin and roast - Add sesame seed and roast - Add Garlic cloves and Curry leaves, toast them till they are toasted - Add chopped onions and green chilli and sauté for few seconds till onion is slightly translucent - Add the star ingredient Ridge Gourd Peel (along with optional pieces) and roast them till it turns slightly brown and shrinks in quantity - Turn off the stove and allow it to cool down - Transfer the cooled mixture to a blender - Add salt, tamarind juice/concentration, jaggery and blend it into a paste (either coarse/fine) - Transfer the paste to a bowl For added flavour - Add . gms of ghee/oil in a small kadai and heat - Add mustard, urad dal and hing followed by curry leaves - Add the tempering to the chutney and mix. The Versatile Ridge Gourd Chutney is ready and can be savoured with Chapati/Bread/Rice/Dosa. Enjoy!! Tip : While blending you can add a few drops of water if the mixture is not grounded.
