Serves 2 - 3/4 cup each - Red bell pepper, yellow bell pepper, green bell pepper 🫑, zucchini 🥒, sweet corn 🌽, broccoli 🥦 - 3/4 cup each - Paneer/ tofu, chickpea (chole) - 1 cup salad greens/ spinach/ arugula 🥬 - 4 tsp soy sauce - 1 tsp vinegar - 1 1/2 tbsp sesame seeds - 1 1/2 tsp grated ginger - 2 tsp oil (I prefer olive oil) - Salt and black pepper to taste 🧂 - Coriander/ cilantro to garnish 🌿
✨Chop bell peppers, zucchini, broccoli and paneer/ tofu medium size. ✨Boil broccoli and corn together until cooked. ✨Boil chickpea (soaked for - hours and pressure cooked) or use canned (drained and washed). ✨Add tbsp oil and grated ginger in a frying pan. Once the oil and ginger start to sizzle, add bell peppers and zucchini together. Sauté - minutes until veggies are almost tender. ✨Remove veggies on the side and add tbsp oil to the pan. Add paneer/ tofu pieces and sauté until golden brown. ✨Now add sautéed veggies, boiled corn, broccoli and chickpea to the pan. Add soy sauce, vinegar, sesame seeds, salt and pepper to taste and mix everything together. Cover the pan and let it cook for minutes. ✨Add greens and let it cook for - more minutes. Garnish with coriander and sesame seeds before serving.
