carrots - peeled and finely chopped
broccoli - blanched and finely chopped
tofu - grated and kneaded
mozzarella cheese - thawed and shredded
gravy - as per choice
green chillies, salt and other spices as per taste - as per taste
oil - as per choice
First prepare the vegetables. you can add other veggies as well if you like
Grate the tofu and cheese
Take tsp oil, add mustard seeds, tumeric and add finely chopped veggies for a quick cook. Add salt as per taste
Once cooked, let the vegetable mixture cool
In a plate knead grated tofu to make it a soft dough
Add the shredded cheese to the dough and knead to make a soft dough ball
Add the vegetable mixture to the dough. Add chopped green chillies as per taste and knead all ingredients
Now shape the koftas as per choice. I made different shapes
I fried the koftas in my air fryer for min at °C with min cook on each side. You can use a microwave as well or shallow fry with a dry coating of bread crumbs or rava/semolina
I made a simple onion tomato gravy. You can make gravy of choice. I served the koftas dry and added gravy on top.
