Ingredients - Soya nuggets (as per macros). Ghee 5 gm Mustard seeds, Asafoetida, Green chillies, Curry leaves, pinch of grated ginger for tempering. Salt, pinch of turmeric, red chilli powder, jeera powder, chaat masala - as per taste Mixed vegetables as per choice ( onion, tomatoes, spinach, capsicum, carrots, etc) Water - twice the quantity of soya powder ( 2 cups of water for 1 cup soya powder) Coriander leaves and a dash of lime
Method Dry roast Soya and let it cool. Grind it to a powder. On medium heat add ghee and the mustard seeds and let it splutter. Then add rest of the tempering and masala. Roast for a couple of seconds and add vegetables of your choice. Cover the vessel and let the vegetables cook for - minutes, you can sprinkle a tsp of water to avoid burning. Add the Soya powder to this and roast for a minute. Add double the amount of water( cups water for cup soya) and cover. Let this cook for minutes or so (depending on the quantity). You can add more water and adjust the consistency according to your choice. Serve hot with some chopped coriander leaves and a dash of lime. Add a few drops of ghee here if your macros allow.
