Prawns Biryani 250 gms prawns - marinate with turmeric powder, red chilli powder and lemon juice. 50 gm Rice 10 gm Ghee 25 gm curd 1 tsp mustard-cumin seeds 1.5 inch cinnamon stick 1 bay leaf 1 black peppercorns 2green cardamoms 1 black cardamom 1 blade mace 3-4 cloves 1 star anise 2 medium onions-sliced 1 tbsp ginger garlic paste 1 large tomato - chopped 1 tbsp lemon juice 2 tsp coriander powder 1/4 tsp turmeric powder 2 tsp red chilli powder 1 tbsp biryani masala 2-3 green chillies - slit 2 tbsp fresh coriander and mint leaves 2 tbsp fried onions Saffron-milk mixture Salt Dough - for sealing the pot.
In a non-stick pot, heat the ghee. Add cumin and mustard seeds, all the whole spices and sliced onions. Mix well. . Add the gg paste, chopped tomato and very little water. Cook till mixture softens . Add lemon juice and all powdered masalas. Give it a good mix. . Next add yogurt and mix. . Add in the prawns and green chillies. Let cook for mins. Sprinkle salt. . Add tbsp coriander + mint leaves. Add tbsp fried onions. . Spread the rice as a layer on the masala. Sprinkle the saffron-milk mixture, tbsp, fried onions, tbsp coriander and mint leaves. Drizzle some ghee. . Cover the pot and seal with dough. . Cook on low heat for - mins.
