Ingredients

Whole grain penne pasta: 100 gm

Olive oil: 15 ml

Onion: 15 gm

Bell peppers: 15 gm

Fresh mushrooms, sliced: 50 gm

Yellow summer squash: 15 gm

Cherry tomatoes: 50 gm

Carrot, shredded: 25 gm

Garlic: 5 gm

Fresh oregano: 2-3 gm

Black pepper: 2-3 gm

Salt: 2-3 pinches

Red pepper flakes: 2-3 gm

Parmesan cheese: 50 gm

Lemon wedges: 1

Method

Step 1

Bring a large pot of lightly salted water to a boil. Add pasta and cook, stirring occasionally, until tender yet firm to the bite, about minutes.

Step 2

Meanwhile, heat oil in an extra-large skillet over medium-high heat. Add onion; cook until softened, to minutes. Add bell peppers, mushrooms, and squash; cook until just tender, about minutes.

Step 3

Add tomatoes, carrot, garlic, oregano, black pepper, salt, and red pepper flakes; cook until tomatoes begin to soften, about minute.

Step 4

Drain pasta; stir into vegetable mixture along with parmesan cheese. Serve with lemon wedges.
