80-100 gm mushroom
70 gm onion
100 ml milk
1 tbsp ginger and garlic minced
5ml olive oil
5 gm butter
1 cube vegetable stock (i used knorr)
salt & pepper to taste
Pour olive oil in a pan. Saute finely chopped onions, ginger and garlic minced until they turn a nice golden brown colour.
Add chopped mushrooms and sauté for a minute or two until it starts to sweat.
Pour the cube of vegetable stock and add ml water and cook well until it softens properly.
Turn off the heat and let it cool down. Take spoon of cooked mushrooms and leave aside. Blend the rest with a mixer to get a smooth consistency and texture. Can add up to ml water to make it smoother.
Put back the mix on medium flame in a pan and add milk ( ml) mix and add salt and pepper to taste.
Let it simmer for a boil and then add butter, take it off the heat and mix. In a bowl/cup, add the set aside mushrooms and then pour the soup and enjoy!
