2 whole eggs
4 egg whites
100 gms boiled chickpeas
100 gms spinach
1 finely chopped onion
1 coarsely chopped tomato
2 green chillies chopped
Rock salt
1/4 tbps black pepper powder
1/4 tbps turmeric
Combine egg whites and whole eggs in a bowl
Add salt, turmeric and black pepper powder
Whisk the mixture. You should be able to see bubbles at the corner of your bowl
Put a skillet on stove on high heat
Once hot, pour the egg mixture in the pan and keep stirring slowly
Now add green chilli, onion and tomato. Mix the mixture properly
Now time to add spinach
Finally add the chickpeas and keep stirring.
Note : Make sure that you keep stirring the mixture in the pan. If not done, the eggs will overcook and the texture will change from creamy to rubbery
