Boneless chicken breast
Salt to taste
Rosemary 1/4 tsp (optional)
Crushed black pepper 1/2 tsp
Olive oil 10 ml
Ginger garlic paste 1 tsp
Lemon juice 1/2 tbsp
1/2 cup sliced mushrooms
1/4 cup sliced leeks/ onions/spring onions
1/2 tsp crushed/chopped garlic
1 tsp ginger garlic paste
1 cup of baby spinach
1 tsp soy sauce
Take chicken breast rub it with salt, / tsp of crushed pepper, rosemary and little lemon juice and grill it or cook it on the pan in ml olive oil until internal temperature reaches degree c. Dont over cook it or chicken will become chewey. Take it out and keep it aside.
In the same pan pour another ml of olive oil and add your leeks/spring onions/ onions and sautée until tender.
Add mushrooms and sautée again until tender
Now add half of ginger garlic paste (you can add it before the leeks, if you dont like the strong aroma of ginger and garlic)
Add salt, rest of the crushed pepper, soy sauce
Add half cup of water and let it simmer until it reaches desired consistency.
Switch off the stove and add tsp of lemon juice. Mix and pour it over the prepared chicken.
Just sautée your baby spinach lightly with the garlic and a little salt. Keep it as side with chicken.
Garnish with green part of leeks or spring onions and enjoy!!
