Step To a bowl, add curd, ginger garlic paste, salt, turmeric & chili powder. Mix up well. Make gashes on the chicken. Add it to the marinade & set aside for hour. Rinse basmati rice and soak for mins.
Step Heat ghee or oil in a pot. Saute whole spices – cardamoms, cloves, cinnamon, star anise, nutmeg. Fry onions evenly stirring often until light brown. Add marinated chicken & saute on a medium heat. Cook on a low flame until the chicken is soft cooked or tender. Mix everything well and layer chicken evenly at the bottom. In the meantime, boil water with salt, green chillies, cardamoms, cinnamon. Add the soaked Basmati rice and let the rice cook uptill %. Strain the boiled rice from water. Spread rice in a layer over the chicken. Level the rice if needed. Sprinkle mint & fried onions if using. Cook the biryani on dum for min on low flame. After that let it sit for min before opening the lid.
