Cauliflower (big, whole)
3 whole eggs
1/2 inch ginger - grated
10 gm ghee
1/2 tomato - chopped
1/2 tbsp Stevia
1/2 tbsp turmeric
1/2 tbsp cumin seeds
1 tbsp cumin powder
1 tbsp Kashmiri red chilli powder
Salt and stevia to taste
1tsp coriander powder
1 tsp garam masala powder
Boil cauliflower with pinch of salt
Drain the water and cool the boiled cauliflower
Drain out excess water by wrenching the cauliflower in cheese cloth
Mash the cauliflower
In a bowl add eggs, salt, coriander powder, garam masala powder and beat well
Add the egg mixture with mashed cauliflower
Pour content in microwave safe bowl and microwave for minutes (or steam the mixture for minutes)
Cool mixture and take out in a plate. Cut in burfi shape
Airfry or bake the burfis in F for minutes turning them halfway through
In a pan add gm ghee
Add cumin seed, chopped tomato, grated ginger and all powdered spice
Fry till oil separates
Lower flame. Add little water, throw in the fried cauliflower burfis, and cover cook for minutes or till the burfis are soft and moist
Turn off flame. Throw in slitted green chilli, / tsp garam masala, gm ghee and chopped coriander.
Mix and keep covered for minutes to intense flavor.
