Cream cheese 200 grams
Sour cream 100 grams
Eggs 3 whole ( 2 for cake filling and 1 for crust)
Vanilla essence or powder 1 tsp
Sugar free substitute 20 grams
1 lime juice
Almond flour 100 grams
Butter 20 grams
5 grams baking powder
Preparation of crust Whisk one egg , add butter and whisk again
Now add almond flour and make it moist crumble
Take a springform pan , grease it well
Add the above crumble to make crust and press it uniformly all the sides with a glass base or a bowl base
Bake it at degrees Celsius for - minutes
Take it out and let cool down
Mean while , take a bowl
Add cream cheese and beat using electric mixer until creamy ( for - minutes)
Add eggs and whisk again
Now add sour cream , lime juice , vanilla and sugar free and baking powder
Blend everything together for - minutes and keep scraping sides for even and smooth mixture
Now line the spring form pan with oven safe aluminium foil from outside to prevent any leakage
Pour the mixture and tap gently to break air bubbles
Take a big baking tray and add cups of water ( water bath)
Place the spring form pan containing mixture in centre
Bake for - minutes on second rack of oven at degrees Celsius
Once done , switch off the oven but let it cool down in oven for minutes ( gradual cooling helps in no cracks)
Now take it out and cool at room temperature for hour
Refrigerate overnight or for hours for best results and add cherries or berries of your choice
