5 eggs
10ml olive oil
Chopped bell pepper (1 each) red, yellow and green
Chopped mushrooms
Chopped tomato and onion - 1 each
Spices - Salt, chilli flakes, black pepper, oregano, basil
2 cloves of garlic finally chopped
Sautee the garlic and onion in oil first. Once done add in the tomato and let it cook.
Then add the mushrooms and bell peppers and cook on medium to high flame, till about half cooked.
Add in all the spices and mix well
You could add in a little water if you like it to slight gravy like base.
Make holes with a spoon in the veggies, break open an egg directly in these holes. Sprinkle some salt and black pepper on the eggs. Cover and let it cook on low heat till the eggs are done.
Eat is as is or Serve with steamed rice/bread
