100 grams Tofu
35 grams rice noodles
10 grams diced onion
10 grams sliced mushrooms
50 grams sliced bell pepper
10 grams soy sauce
5 grams rice vinegar
3 grams corn starch
5 grams oil
Salt and pepper to taste
1 cup water
Cook the rice noodles or rice cakes per package directions. Set aside. . Add oil in the pan. Add the vegetables and stir for a few minutes. Add tofu and cook until it browns on all sides. Toss in the Rice noodles/rice cake. . Mix the water and cornstarch in a bowl, avoiding lumps. Add the soy sauce, rice vinegar, salt and pepper. . Pour this sauce in the pan with vegetables and tofu. Gently stir to combine. Garnish with scallions and serve warm.
