Noodles: 100 gm
Mushroom: 1
Baby corn: 2
Carrot: 1/2
Bell pepper: 1/4 bowl
Onion: 1
Garlic: 2 cloves
Spring onion: 1/4 cup
Coriander leaves with stem: 1 tbsp
Green chilli: 1
Salt and pepper powder: To taste
Soy sauce: 20 gm
Palm sugar: 1/2 tsp
Olive oil: 15 ml
Roasted peanuts: 20 gm
Red chilli sauce: 5 ml
Chop mushrooms and set aside.
Cut baby corns, carrots, onion, bell pepper in julliens.
Grate ginger, garlic and set aside.
Fine chop green chillies, spring onions, coriander leaves and set aside.
Lightly crush the roasted peanuts.
Boil noodles as per packet instructions and drain and let them cool down.
Heat up oil in a wok/pan.
Add onions, garlic, green chillies and cook for minute.
Now add baby corn, mushrooms, carrot, bell pepper, spring onion and cook for - minutes; don't overcook them.
Add in noodles and toss well.
Switch off the gas, garnish with crushed peanuts and spring onion greens.
