Steps . Prepare the soya . Boil water + pinch of salt. . Add soya chunks & boil for – minutes. . Squeeze out water completely & keep aside. --- . Make the pumpkin sauce . In a pan, heat tsp oil/ghee. . Add chopped onion + garlic. Sauté until soft. . Add pumpkin cubes + little salt. . Add ½ cup water and cook until pumpkin becomes soft (– minutes). . Cool slightly & blend into a smooth puree. . Put back on the pan, add milk/coconut milk. . Add pepper, chili flakes, herbs & adjust salt. . Cook – minutes until creamy. --- . Combine Add cooked soya chunks to the sauce. Mix well so that every piece is coated. Cook – more minutes to absorb flavor. --- . Optional add-ons (for more nutrition) Add spinach / broccoli while cooking Add tbsp grated cheese if you want richer flavour Add – soaked cashews while blending pumpkin for extra creaminess --- 🍽️ Serving suggestion Eat as a warm bowl meal Or with garlic toast Or with sautéed veggies on the side ---
