Cinnamon powder: 1 gm
Black cardamoms: 0.5 gm
Black peppercorns: 3 gm
Ginger: 5 gm
Garlic cloves: 5 gm
Coriander powder: 10 gm
Red chilli powder: 2 gm
Turmeric powder: 1 gm
Garam masala powder: 2 gm
Bhuna masala: 30 gm
Tamarind paste: 3 gm
Fresh coriander leaves, finely chopped: 20 gm
Heat oil in a non-stick pan, add bay leaves, cinnamon, black cardamoms and black peppercorns and sautue till fragrant.
Finely chop ginger, mash garlic cloves and add both to the pan and sautue for - minutes.
Roughly chop tomatoes and puree them. Add to the pan and sautue for - minutes.
Add coriander powder, red chilli powder, turmeric powder. garam masala powder and mix it all well.
Add bhuna masala and sautue for ubd minute. Add - cups of water, tamarind paste and mix. Allow the gravy to come to a boil.
Break eggs into a bowl and whisk well. With a teaspoon, drizzle the whisked egg into the gravy and cook for - minutes.
Add coriander leaves and mix. Transfer into a serving bowl and serve hot.
