Rajma- 30gms
Soya chunks- 20gms
Soya flour- 20gms
Wheat flour- 50gms
Curd- 50gms
Oil- 10gms
Veggies- 150gms (tomatoes, onions, capsicum, carrot, lettuce, and cucumber)
Spices- red chilli powder, tumeric powder, coriander powder, mint powder, and cumin powder
Seasoning - Salt and black pepper to taste
Misc. ingredients - 2 tbsp lemon juice, 2 clove fine chopped garlic , and 3 fine chopped jalapeno
Soak the rajma overnight in water and boil it in the morning with a pinch of salt.
Meanwhile, boil gms of soya chunks and blitz it in a mixer grinder.
In a bowl add the boiled rajma, soya chunks, soya flour along with the listed spices and salt and mash everything together.
Fine chop onion, capsicum, and carrot and add it to this mixture. Add tbsp lemon juice into it. Mix everything together and adjust the spices and seasoning to your liking. Cover this mixture and let it rest for a couple of mins.
In another bowl, knead the dough with gms of wheat flour and cook a roti out of it.
Now, spread the whole rajma soya mixture onto one side of the roti.
Heat up a nonstick pan and place this roti on the pan (keeping rajma soya mixture at the bottom).
Cook on a low flame for - mins and brush some oil on the top side of the roti.
Now, flip the roti and cook it for a min. Meanwhile brush the remaining oil on the rajma soya mixture side.
Once again flip and cook it for - mins till it gets crispy on top.
For the dressing: In a small bowl add curd, chopped garlic, chopped jalapeno, and tbsp lemon juice. Add salt and pepper to taste. Mix everything together and the dressing is ready.
To assemble: Place the roti in a plate with rajma soya mixture on top. spread the dressing all over it and add the remaining cut veggies on the top. The wrap is ready! ๐ฏ๐ฎ
