Water
In a pan dry roast lentil and air fry soya chunks for minutes at degree. Let it cool down, put both of them in mixer, grinder and grind it to make find powder. Now take edamame seeds and grind it with little water. In a bowl, take wheat to that add carom seeds, salt soya and lentil powder and edamame paste. Now to all these ingredients add water preferably warm water and start kneading it. Keep adding water little bit till you make a soft dough. Cover and leave the dough for sometime.
Divide the dough into equal parts and make smooth balls. You can also knead the dough again and then roll to balls. Keep them covered until we finish using them up. Roll the dough to a round layer. While you roll the rest, heat a tawa or pan on a high flame. When it is hot enough, transfer the paratha to the pan. Very soon bubbles begin to show up. You will have to adjust the heat as needed. Very high flame may burn them and low flame tends to make them hard. Flip it to the other side. Gently press with a wooden spatula apply groundnut oil and repeat the same for other side also. Once your Parathas are cooked serve it hot.. I made cauliflower, with tofu and peas curry to go with it, you have it with coriander chutney or with anything of your choice.
