Paneer - 100g
Red lentils/masoor dal - 40g
Ghee- 5 g
Spinach- 100g
Onion- 20g
Tomato- 50g
Carrots- 20g
Corn- 20g
Bell peppers- 20g
Spices: red chili powder (2tsp), turmeric powder(0.5tsp), coriander powder (1tsp), cumin powder (1 tsp) , mixed herbs(1 tsp), salt, black pepper powder (1 tsp)
Whole spices- cinnamon stick, cloves, bay leaf
Ginger + garlic - 10g
Wash the red lentils and immerse it in water and boil it adding salt for - minutes until it turns soft. Blend it coarsely with whisker and keep it aside.
In a big deep pan, add ghee and whole spices and let it splutter. After that add chopped onion and saute it until it turns translucent. Add ginger garlic paste and saute it until the rawness disappears. Add remaining veggies like capsicum/bellpeppers, carrots, boiled corn kernels except spinach.
Now, add chopped tomatoes or grind it in the mixture and add to the pan. Let it cook on high flame for about - minutes. Add all spices and let it cook until it’s incorporated into the gravy.
Then, grate paneer and add it to the pan adding cup water. Add chopped spinach and let it all simmer for about minutes. Tada! It’s done. Pro tip: if don’t want to pair it with something, leave it watery and it will be like a soup. Alternatively, you may pair with rice/chapati/tortilla etc.
Another pro tip: you may grated boiled eggs, tofu pr shredded chicken instead of paneer to get variety
